recipe?

Ingredients (serves

* 1 1/3 cups (200g) plain flour

* 2 tbs cocoa

* 1 tsp baking powder

* 1/2 tsp bicarbonate of soda

* 200g good-quality dark chocolate, chopped

* 225g unsalted butter, softened, chopped

* 1 cup (220g) caster sugar

* 1 tsp vanilla extract

* 4 eggs

* 1/2 cup (125ml) milk

* Chocolate ganache icing and chocolate curls, to decorate

Method

1. Preheat the oven to 160°C. Grease and line a 24cm round springform cake pan.

2. Sift the flour, cocoa, baking powder and bicarbonate of soda into a bowl. Set aside.

3. Melt the chocolate in a heatproof bowl set over a pan of barely simmering water (don’t let bowl touch water). Cool slightly.

4. Beat butter and sugar with an electric mixer until light and fluffy. With beaters on medium speed, add vanilla, then add eggs, 1 at a time, beating well after each addition. Pour in cooled chocolate and beat until well combined. Beat in a third of sifted ingredients, followed by a third of the milk. Repeat until all ingredients are incorporated, beating until smooth.

5. Pour mixture into the pan and bake for 45-55 minutes until risen and a skewer inserted in the centre comes out clean. Cool in the pan on a rack for 10 minutes, then invert onto rack to cool completely.

6. To serve, spread the icing over the top and sides of the cake using a hot palette knife, then decorate with chocolate curls.

7. To make chocolate ganache: Melt 150g chopped good-quality dark chocolate with 125ml pure cream and 20g unsalted butter in a heatproof bowl set over a pan of simmering water (don’t let the bowl touch the water). Stir until well combined, then set aside for 30 minutes to cool and thicken before use.

8. To make chocolate curls: Using a palette knife, spread melted chocolate 2-3mm thick on a hard clean surface such as a glass chopping board or marble slab that you can move. Stand at room temperature until almost set. Shave curls using a peeler or palette knife, pulling towards you at an angle. If the chocolate breaks, it is set too hard – leave in a warm place until more pliable. To make small curls, simply run a peeler along the side of a block of chocolate.

Notes & tips

* It’s best to use good-quality dark chocolate with at least 70% cocoa solids for cooking, but you can use milk chocolate if you prefer.

* To melt chocolate, chop it, then place in a dry, heatproof bowl over a pan of simmering (not boiling) water. The bowl shouldn’t touch the water. As the chocolate melts, stir very gently with a wooden or metal spoon to ensure it melts evenly. As soon as the chocolate is smooth, remove the bowl from the heat. If the chocolate overheats, or if water is in contact with it as it’s melting, it will ’seize’ and become hard and unusable.

* Storing the cake: Cool cake completely before storing in an airtight container. Keep un-iced cake at room temperature for up to 2-3 days. You can freeze any leftover cake in plastic wrap for up to 6 months. To defrost, thaw out in the fridge, then at room temperature.

Variations

* Soft-centred chocolate puddings: Preheat the oven to 180°C. Grease eight 200ml ramekins. Omit the cocoa, baking powder, bicarbonate of soda and milk from the master recipe above, reduce the plain flour to 50g, and replace the caster sugar with 1/2 firmly packed cup (100g) brown sugar. Make a batter as per the master recipe method, adding the flour all at once rather than in stages. Spoon the mixture into the ramekins. Bake in the oven for 12-15 minutes until set on the surface but still slightly soft in the centre. Remove from the oven, dust with icing sugar and serve immediately with thick cream.

* Choc-macadamia ice cream layer cake: Halve all the quantities for the master recipe, then make the cake as per the master recipe method, instead using a greased and lined 7cm-deep, 25cm x 10cm loaf pan. Cool as for the master recipe, then carefully cut a thin layer from the top of the cake and discard. Slice the remaining cake horizontally into 3 long pieces. Place cake slices on a tray, with plastic wrap or baking paper between each layer, and freeze for at least 1 hour. Clean loaf pan, then line with plastic wrap, leaving enough overhanging to cover the top. Return bottom layer of cake to pan. Working quickly, use a hot palette knife (dip it in hot water) to evenly spread about 1 1/2 cups ice cream (we used macadamia) over the cake, right to the edges. Repeat with another layer of cake and ice cream, then top with remaining piece of cake. Cover with overhanging plastic, then freeze for at least 3 hours. Remove cake from pan, using plastic wrap to help, then cut into 6-8 slices. Serve drizzled with chocolate sauce, if desired.

* Chocolate & hazelnut petits fours: Halve all the quantities for the master recipe, then make the cake as per master recipe method, instead using a greased and lined 7cm-deep, 25cm x 10cm loaf pan. Carefully slice cooled cake in half horizontally. Cut each piece into 3 long strips, then cut each strip into 8 pieces to make 48 cubes. Set aside. To make chocolate icing, place 100g chopped good-quality dark chocolate, 60g unsalted butter and 3 tbs water in a heatproof bowl set over a pan of barely simmering water (don’t let bowl touch the water) until chocolate melts. Stir in 1/2 cup (75g) sifted icing sugar, then remove bowl from heat and cool slightly. You should have a thin, glossy icing – add a little water if too thick. Place cakes on a rack. Top each with 1/4 tsp Nutella (or other hazelnut spread). Gently press in a hazelnut or macadamia. Using a small palette knife, drizzle and spread icing over cakes. Sprinkle with flaked chocolate garnish (from supermarket baking aisle), then leave to set at room temperature for at least 2 hours.

naisip niyo na ba kung gaano karaming buhay ang nabago ng recipe ng chocolate cake na yan? kung ilang babae na ang nakapag-asawa dahil sa chocolate cake na ginamit sa pagpopropose sakaniya? o ilang pamilya na kaya ang yumaman dahil sa pagtitinda ng cake? ilang buhay na kaya ang natapos dahil bawal sakaniya yang chocolate cake pero patuloy pa rin siyang kumakain? naisip niyo na ba na ang recipe na ito ay maituturing natin na buhay?

naisip ko lang kasi.. sana ang buhay ay parang recipe na lang no? nakasulat kung anu-ano ang kailangan at kung ano ang gagawin. hindi ba’t mas madali sana yun? kung alam na ng tao kung ano ang patutunguhan nila?

pero siguro nga, kailangan maging magulo ng buhay ng tao dahil tulad ng ampalaya… kailangan ng isang mapait na bagay para lalong lumakas ang isang tao. kung nakabanghay na kung paano at ano ang gagawin, edi wala nang thrill diba? wala na yung twist ng buhay, yung twist na nakapag-iiba ng tao sa kahit ano pang bagay.

the truth is we hope and we never stop believing

hindi pa rin ako makaget over sa emo post ko kagabi maybe i really need stress. or a book perhaps? kailangan ko ng gagawin. kailangan ko ng 2-week project para lang makalimutan lahat ng to. kung ano man to. ang hirap kasing magpakanormal knowing na may mali diba? i want stress. ang hirap kaya na lagi kang tinatanghali ng gising kasi alam mong wala ka rin namang gagawin the following day. it sucks to know na when you wake up (around 9am?) wala nang mga tao sa bahay nila and you end up plurking all by yourself. kamusta naman ang karma mo, walang nagrerespond sa plurks mo:|

so yea, everyone’s busy now. well, almost everyone. may iilan ilan pa ring hindi busy kasi hindi sila trisem and for us highschool students? we end up bumming around since review classes are over and my summer isn’t really that productive. yes, i have chamber rehearsals.. pero wednesdays and fridays lang [at wala pa kami this friday] bagong piyesa nanaman siguro dahil natapos na namin yung pokerface at im yours syet ayoko talaga ng ganito. sana talaga andito si daddy para marami kaming pupuntahan. O kung wala mang pupuntahan, at least may kausap ako diba? tsk ang tahimik talaga. ayoko nito. ayaw ayaw

it’s ironic how “lie” could be in the middle of “believe”, right?

for some reasons.. i’m starting to be annoyed by something.. and for some reasons, i know that feeling will get me. as in konti na lang and i’ll break down na. amp, old people these days right? they shout like there’s no tomorrow and they find every little mistake just to complain and yell at people. wth, problema mo?? and she wants to die. warra lang eh. its getting to my nerves already bakit kasi kailangan niya tumira dito? well, not that i don’t love her.. kasi … basta yun na yun. saka na lang pag di ko na talaga kaya. haha!

cute nung mga bata kanina sa church.. well, they’re kinda annoying kasi ang ingay.. pero cute pa rin, in a way na mapapangiti ka na lang sa kabalbalan nila. they were playing inside the church. ginagawa nilang train yung kneelers.. and the other kid can’t make the “choo choo” sound pa. haha cute eh. yung mga boses pa nila. so.. innocent haha wala lang.. napaisip lang ako how could these adorable little earthlings.. fall in love then get hurt? ang komplikado ng mundo nu? if people realized how adorable each person was when they were young.. i don’t think anyone could have a heart to break somebody else’s heart right?

how i wish i could stay young forever. stay as adorable and as innocent. stay worry free and carefree….

and the only pain i get is from booboos that i had because i was running too fast.

tsk. kailangan ko lang ng kausap. hahaha baka kung saan pa to mapunta eh.

i guess, we can’t say that we’re totally over the last relationship we had. the truth is, deep inside our hearts, we hope. we hope that one day the most recent partner would realize what he had given up. we hope that someday, he comes back and everything will eventually go back to normal but here’s the thing.. once something leaves, it is never the same thing that comes back. i guess that’s the way it is. Even if life tells you that things will never be the same again, we still believe.

we hope and we never stop believing.

first-third year

ang bilis ng panahon no? parang kailan lang ako yung batang maliit na naknecktie na tahimik. yung batang pa-petix petix lang sa school works na naglalaro pa ng manika… tapos ngayon.. isang taon na lang, hindi na ko magsusuot ng checkered na bowtie at checkered na skirt. isang taon na lang, magbubus na ko papuntang maynila para pumasok araw araw at finally, harapin yung landas na gusto kong tunguhin.. waaaaaaaaa, bakit ang bilis ng panahon? parang ang hirap sulitin ng bawat minutong lumilipas.. before you know it, tapos na. hindi na naenjoy o kung ano man. hay, bahala na si batman

dapat nga nag-aayos na ko ngayon eh. kasi dapat pinapaplantsa ko na yung damit ko. dapat nakahanda na yung bag ko at dapat tinext ko na si mommy na aalis ako ng bahay ng 11am. babalik ako ng maynila. back to the review center for some career orientation and the distribution of the work books.. oo, ganito kabilis ang panahon. parang last summer lang, napakabummer ko sa bahay dahil hindi ako pinagkocommute, ngayon nakakarating na ko ng maynila at pinapayagan na kong umuwi mag-isa. kung pwede lang itigil ang panahon, wala sigurong masasaktan no? kasi ititigil ng bawat isa yung panahon sa panahon kung saan masaya sila.. pero hindi pwede yun eh. that’s the way it is. we’re happy.. we get pain.. we’re sad then someone comes along to ease the pain.. and the cycle goes on until you reach this level wherein nakuha mo nang lahat and finally, you get to be happy. matagal pa ko dun.. i’m too young for that haha!

first year.

GenSan.

general santos city ang nagbinyag sakin sa highschool. tight bonds were formed. kami raw nga ata ang pinakaclose na section.. well, siguro nga ganon, pano ba naman kasi, kami lang ang first year sa first floor. lahat sila nasa taas na kami yung super nadadalian na pumunta ng canteen at carry pa namin pumunta ng trellis kahit 20mins lang ang break.. well, may nalelate pero hindi marami… kasi magkakasama rin kaming lahat..

first play: Biag ni Lam ang. lights director ako dito. haha. tas kasama ko si ricardo.. i can still remember yung nacommend ako ni miss elena.. at since first year kami, sobrang natatakot kami kasi first play namen yun sa buong highschool life namen it was fun and stressful at the same time.. warra, nabali ID ko dito. haha ito yung reason why my first year ID was broken.. kasi nakabend na siya tas nasira siya for some reasons i can’t remember )

presentations: PressCon ng A Child of Sorrow. tama raw bang inumin ng audience yung props naming tubig?! warra lang eh. hahaha pero this was a good presentation naaalala ko pa, sir dan, sir alfie tapos yung bagong teacher yung nagjudge. may IDs kami nito.. hindi ko lang alam saan napunta yung sakin yay scriptwriter!… scriptwriter nga ba ko?

first academic week: ano lang ba sinalihan ko? dasayawit? hahaha mahiyain pa ko nito.. lagi akong nasa production eh.. well, hanggang ngayon pa rin naman diba? haha.. pero yun we won 2nd place! yay us.

meron pa pala.. MATH CHEER! hahahaha “GenSan where are you?” okay, never mind that memory.. spell disaster

other contests, i can’t remember.. oh, yung jazz up your pants thing.. tas ayun.. haha.. overall, my first year was fun.. good start for highschool

summer: incoming 2nd year.

CHAMBER!dito ako sumali ng chamber naaalala ko pa.. nung kumatok kami.. the first reaction of sir was “first year yan. kumakatok eh” haha! tas super magkakadikit kaming batchmates kasi nahihiya pa. tas mababait pa. haha!

clarinet ako nung una.. pero dahil maliit ang daliri ko, hindi ko abot ang Si so ayun, nilipat ako sa flute.. and forever na kong nasa flute. hahaha. first piece: Lupang Hinirang.. Second? well, seton hymn. what do you expect?

second year

cv, well.. band section na kami nito : ) so medyo magkakakilala na kami nito kasi magkakasama kami nung summer. CV was fun.. not as close as gensan pero fun pa rin. nothing special sa section as a whole, except sa band section nga siya.

play: teka, may play ba nito? shoot, hindi ko maalala! hahaha.. meron ba? ah! filipino.. meron. Bb Pathupats (Spelling?) saka other minor plays.. wala akong maalalang major eh.

El Fili pala! hahaha XD okay yun. el fili. di siya masyado successful eh. so wag na natin pag-usapan

academic week: sabayang bigkasan.  dasayawit pa rin yata? tapos… some 1vs100 thing. haha something came up with that.. try reading my posts.. nakwento ko yun dun eh.. i told myself i’m not posting about that diba? so ayun haha! pano ko kaya naalala yun?

Korean Fan Dance! saya nito, kasi halos lahat ng girls namen sumayaw.. with the shiny costume and the feather-ey fans ) kami lang yata ang hindi naiinitan kasi may pamaypay kami.. the flower thing was cute.. and the make-up? wala lang, naaalala ko lang na tumulong si sir martin sa make up namen :> hindi kami nanalo, pero we get to repeat the performance sa awarding.. for some reasons.. na hindi namin alam. hmpt, badtrip. haha i still have my costume

feb 18: first tugtog na kami lang.. kasi retreat nila ate :> woooooo

March: first graduation

we played for our seniors. una namin to. grabe, ang dami nila. as in after nila magmarch, hindi mo na ramdam yung kamay mo. hahaha  it was fun kasi magkakasama kaming chamber hanggang gabi. well mga 10? o 9  mga ganon. astig eh. ang creepy ng seton. haha! nagtatakutan pa kami ni rikka. ito yung grad na pinakamarami kaming pictures. well, siguro kasi una namin.. masyadong natuwa. haha. naaalala ko pa sila kuya J, K  at L ) at yung astig niyang clarinet aw memories. haha i’ll miss this. SOBRA

cc wasn’t as close as gensan.. pero mas close kami kesa sa CV. fun to. kasi ewan.. basta dito ako unang naging maldita. hahaha! kasi dito ako unang nagalit sa classmates ko.. nakakainis kasi eh. haha eh tumahimik lang ako. ayun.. wag daw ako ganon.. nakakatakot raw:P

playS: filipino: pitong taon! yea. comedy to. tapos tagalog. haha astig nga eh. director was eric. lead roles were: james, chesca, kenneth, celina, darwin and nikko. well, sila lang talaga characters hahah!  ito yung pinagpuyatan namen! hindi ako natulog to finish the.. ano ba yun? booklets? basta yung thing na nilalagyan ng list ng characters, production staff and everything.. gising ako nun the whole day.. i started making those at 9pm. natapos ako.. 9am. oo hindi ako natulog hahaha! tas i had a nap for  30 mins ata o one hour? na sobrang kulang tapos off to school to deliver the booklets. dapat talaga papasok pa ko nun! kaso lang hindi pa tapos. plus nung umalis ako ng bahay.. lunch na nila. so ang aabutan ko lang homeroom and ZL clubs. alangan namang magchamber ako ng ganon diba? wala na kong hangin non! so nagdeliver lang ako ng booklets tas umuwi na para matulog

english: Anthony and Cleopatra. hardcore naman to. drama.. tragedy siya eh. ito yung inaabot kami ng gabi para ipractice. our hard work paid off naman eh.. minus the costumes. maganda siya sobrang dami kaming problema nito. stressful! hahaha pero fun kasi ewan ko. basta masaya.. it’s easy to work with CC kasi, unlike others, mas konti ang angal dito. fun fun fun. by the way, trixie was the director:) asst nia si eric [vice versa lang sa pitong taon] lead roles were gelo and emika

i was PM for both plays nakakapagod kasi dapat andun ka sa lahat ng practices para magtaray kaya i promised myself not to be mataray sa incoming year. hahaha! masaya siya sana next year umarte na rin ako nu? )

presentations: feasib later part na to eh, kasi yung feasib ng group namen, after quarterly na. it was a hectic day. kasi feasib sa umaga.. tapos report nila chesca sa 11 kaso something came up so punta ko kela aimee at hindi ako nakapanuod ng report nila tapos outbox. tapos balik ng school para ayusin reply slips.. tapos chamber for grad practice. nakakapagod! haha

maayos feasib namen 84 ba kami? o 86? idk. hahaha yun na yun. basta we had fun in creating that business.

today. i learned three things.

trust is really important. when you lose it.. well good luck sayo. that person won’t give it back. or it will never be the same again.

friends are there forever they won’t leave you. kahit anong mangyari. at mas malala to pag bestfriends.they will never ever backstab you. truth hurts.. pero sasabihin nila kasi you need to know.. and after 5 mins of being shocked, you should thank them and tell them you love them. yun kasi yung totoo and andiyan lang sila forever and ever amen.
